- SCALLOPED OYSTERS.
Sprinkle a buttered dish with bread crumbs, then put in a layer of oysters, some bits of butter, pepper and salt, and so on until the dish is filled, leaving the crumbs and butter on the top. Pour over a little milk. Bake until a light brown.

LOBSTER SALAD.
Two lobsters, four heads of lettuce, eggs, butter, mustard, cayenne pepper, salt, sugar and vinegar. Pick your lobsters fine, cut your lettuce fine and put these in a salad bowl in layers. Boil your eggs, mash the yelks, add three tablespoonfuls of butter, a teaspoonful of mustard, little cayenne pepper and salt, two tablespoon-fuls sugar, two cupfuls vinegar. Heat together and pow over when served.

BAVARIAN CREAM
One quart sweet cream, four eggs -- yelks, one-half ounce gelatine, one cupful sugar, vanilla or almond extract, cold water. Soak the gelatine in enough cold water to cover it one hour, then stir it into one pint cream made boiling hot, beat yelks smoothly with the sugar, then add the boiling mixture, beaten in a little at a time, beat until it begins to thicken, but do not actually boil, remove from fire, flavor with one teaspoonful of the essence, and while hot stir in the other pint of cream whipped to a stiff froth, beat this, whip a spoonful at a time into the custard until it is like sponge cake batter. Dip a mould in cold water, pour in mixture and set on ice to form.

WHITE CAKE
Whites of three eggs, one-third cupful of butter, one cupful of sugar, one and one-half cupfuls of flour,one-half cupful milk. Beat butter and sugar together, add flour and one small teaspoonful cream tartar, small half spoonful soda. Add whites of eggs last well beaten.1a

- MRS. W. H. LUTZ - The death occurred rather suddenly at noon New Year's day at the hospital of Mary Jane Stuart, wife of William H. Lutz, in her 79th year. Mrs. Lutz had been ailing for about 10 days, although she had not been in good health prior to that. On Saturday last she went to the hospital for treatment. Pneumonia developed and resulted in her passing yesterday at noon. The late Mrs. Lutz was born at Burford, one of a family of six, of which the only survivor is a brother, Travis Stuart of Burford. Deceased had been a resident of Galt for over 50 years and was well known here. Mrs. Lutz was devoted to her home life. She was a member of Central Presbyterian Church and took an active interest in various church organizations and also in charitable works in the city. She is survived by her husband, who at the present time is also ill at the hospital. Today Mr. Lutz's condition was reported as improved. Besides her husband, there survives one brother in Burford. The funeral of the late Mrs. Lutz will take place on Thursday afternoon at 2: 30 from her late residence, 92 Cambridge Street, to Mount View Cemetery.
