    Joseph Eby, "the second son of John Eby, was born December 13th, 1777, and came to Canada, from Pennsylvania, in 1818. He spent most of his time with his cousin, Bishop Benjamin Eby, and Christian Burkholder who resided one mile north of the town of Waterloo, on the place now known as the "Huether Farm". When at Christian Burkholder's "Josey" (or "der kla Joe Avy" as he was called), spent his leisure time in making shoes for the primitive settlers. The shoes were made without the use of a last, and when done had more the resemblance of a leather bag than of a shoe. He used no pegs, the shoe being made complete by sewing. He lived a very conscientious life, and was strongly opposed to the use of intoxicating liquors, obscene language, card playing and all kinds of gambling so common in those days. He was never married, and in the latter years of his life was much troubled with a severe cough. He died in the year 1855 at the residence of Lemuel Eby, his nephew, in Bridgeport, Ontario."
