    Recipes:

    Pour one pint of boiling water over two cupfuls of sugar and one lemon cut very fine. Wet three table-spoonfuls of corn starch with a little milk and stir in. Let it come to a boil, simmer five minutes, slice four oranges and lay in a glass dish, scatter over them a little powdered sugar, pour over them the lemon and corn starch when cool, whip the whites of two eggs with a little sugar, flavor with lemon essence, pour over the top and let get icy cold.

    ICE-CREAM CAKE

    One cupful white sugar, two tablespoonfuls butter, softened, not melted, one-half cupful sweet milk, three eggs, one and one-half cupfuls flour, two teaspoonfuls baking powder. This makes two layers. When cold with a sharp knife remove the brown top of the under layer, spread the following custard between the layers and ice with boiled icing.

    CUSTARD - One cupful sweet milk, one egg, two tablespoonfuls powdered sugar, one dessertspoonful corn starch. Heat the milk to near boiling, add corn starch dissolved in part of the milk, then add the egg well beaten with the sugar. Flavor with pineapple or vanilla.

    Notes:

    Adam Hood, was born in Dalkeith, Scotland, 22 Nov 1816 sail for America 10 Aug 1834 arriving to Galt shortly after the cholera outbreak. He first was employed as a carpenter with Stuart & Walker and was involved with the building of St. Andrews church in Galt, completed in 1835. Member of the circulating library, dramatic society and was considered one of the best rifle shots of the day.

    A-2-161 Andrew Ramsay The Last Will and Testament of Andrew Ramsay late of the Town of Galt, Tailor, who died on or about the nineteenth day of August in the year of our Lord 1862 at the Town of Galt, and who at the time of his death had a fixed place of abode at the Town of Galt, was proved and registered in the said Surrogate Court, a true copy of which said Last Will and Testament is hereunder written, and that the administration of all and singular the personal estate andf effects right and credits of the said deceased, and any way concerning his will was granted by the aforesaid Court to Andrew Landreth and James Elliot of the Township of North Dumfries, Yeomen, and James Cowan of the Township of Waterloo, Esquire, the Executors named in the said will…

    …In the name of God, amen. I Andrew Ramsay of the Town of Galt, Tailor, being weak in body but of sound mind and disposing memory, Blessed by Almight God for the same, do make and publish this my Last Will and Testament in manner and form following that is to say :

    (First) I will and direct that all my just debts, funeral and testamentary expenses be paid by my trustees and Executors hereinafter named as soon after my decease as possible.

    (Second) I give and bequeath unto my dear and only daughter Margaret all my goods and chattels, household furniture and effects that I shall die possessed of to and for her sole use and benefit.

    (Third) I give devise and bequeath unto my said dear daughter Margaret the use benefit and occupation of my house and Lot on which I at present reside being Lot Number Two on the East side of Railroad Street in the Town of Galt, containing by admeasurement thirty two perches of land be the same more or less until she shall attain the age of twenty one years together with all the improvements thereon, and upon her attaining the the[sic] said age of twenty one years. Then to have and to hold to her the said Margaret her heirs and assigns for ever.

    (Fourth) I give devise and bequeath unto my trustees and executors hereinafter named the East end of Lot number Five on the east side of Railroad Street in the Town of Galt containing by admeasurement thirty-four perches of land more or less upon trust to sell and dispose of the same either by private sale or public auction for the best price that can be obtained for the same and upon receipt of the purchase money my trustees and executors or the survivors or survivor of them to make execute and deliver good and sufficient deed or deeds for the same and to use retain and apply the purchase money for the support, maintenance and education of my dear daughter Margaret until she arrive at the age of twenty one years and for the general purposes and requirements of my estate.

    (Fifth) I will and direct that my dear sister-in-law Christina [Landreth?] reside with my dear daughter Margaret and enjoy the use of the furniture and house bequeathed and devised to my said dear daughter Margaret until she shall arrive at the age of twenty one years subject however to the approval and concurrence of my trustees and executors or if either of them shall marry before my daughter arrives at the age of twenty one years, then my said dear daughter Margaret shall have and enjoy the whole and my sister in laws interest in the same shall cease and determine.

    (Sixth) I give devise and bequeath unto my dear daughter Margaret for the term of her natural life all that my farm being composed of the north three quarters of the whole Lot Number Three in the ninth concession of the township of North Dumfries, containing by admeasurement one hundred and fifty acres be the same more or less also the north west quarter of the north half of Lot Number Eleven in the eighth concession of the Township of Beverly in the County of Wentworth, containing by admeasurement fifty acres more of less, making in all two hundred acres of land more or less for and during the aforesaid term of her natural life upon the express condition that she shall not dispose of or encumber the same and from and after her decease leaving lawful issue then, I give devise and bequeath my said farm to such issue, their heirs and assigns forever and in the event of my said daughter Margaret dying leaving no lawful issue that I give devise and bequeath my said farm to my trustees and executors hereinafter named upon trust to sell and dispose of the same in such manner as to them shall seem best and for the best price that can be attained for the same and upon receipt of the purchase money my trustees and executors or the survivors or survivor of them to make execute and deliver good and sufficient deed or deeds fo the same, and after the deduction of reasonable charges therefore to divide and distribute the sum of two thousand dollars apportion of the proceeds to and among the following persons or their legal representatives in manner and form following, that is to say : To George Landreth, my brother-in-law, the sum of five hundred dollars, to the children of James Landreth my brother-in-law, the sum of five hundred dollars to be equally divided amongst them to Andrew Landreth my brother-in-law, the sum of five hundred dollars and to John Landreth my brother-in-law, the sum of five hundred dollars, and to divide and distribute the rest and residue of the proceeds arising from the sale of my said farm in equal shares and proportions to and amongst the following persons or their legal representatives in manner as follows that is to say my brother-in-law George Murray, my sister Elspeth Elliot, my sister Sarah Rutherford and my niece Agnes Ramsay Cowan, daughter of my deceased sister Agnes, and in the event of my said niece Agnes dying before attaining the age of twenty one years, or without leaving lawful issue, then I will and direct that the proportion so bequeathed to her shall be divided equally to and amongst the said George Murray, Ellspeth[sic] Elliot and Sarah Rutherford or their legal representatives.

    (Seventh) I will and direct that my Trustees and Executors hereinafter named immediately upon and after my decease take possession of all my rights and credits monies and securities for money taking a true and correct inventory for the same and that they properly care for, support and educate my dear daughter Margaret in a manner befitting her position and station and that they also take the charge and management of my farm during my daughter Margaret's minority and lease and manage the same as to them shall seem best and most to the advantage of my estate and when necessary to build or erect and cause to be built or erected upon my farm in a convenient and suitable position a plain substantial frame farm house twenty five feet by thirty five feet and of sufficient height to give and allow bedrooms above the first story said house to be divided and partitioned in a manner suitable for a farm house and I farther will and direct that upon my dear daughter Margaret arriving at twenty one years of age my trustees and executors or the survivors or survivor of them furnish her with a full and correct statement of all the business, receipts and expenditure of monies done and made by them and that they give up to my said daughter the possession and control of my said farm together with all the monies and property belonging to my estate.

    (Eighth) I nominate, constitute and appoint my trusty and esteemed friends Andrew Landreth of the Township of North Dumfries, Yeoman, James Elliot of the same place, Yeoman, and James Cowan of the Township of Waterloo, Esquire, Trustees and Executors of this my Last Will and Testament.

    (Lastly) I hereby revoke all former wills and codicils by me at any time heretofore made and declare this to be and contain my Last Will and Testament…

    A-1-78 George Laudreth Probate of the Will of George Laudreth, late of the Village of Galt, granted the Seventh day of November 1855, on the Petition of James Bury? John Gillespie and George Barrie Jr. Executors named in said Will (Andrew Ramsay having refused to act): -

    I George Laudreth of the Township of Dumfries, Yeoman…I give and bequeath at my death to my beloved wife Margreat B. Laudreth an annuity of Twenty five pounds currency payable on the first day of January, yearly; and further I will and bequeath unto my second son Andrew Laudreth all my Freehold property and tenements etc, situated and being in the Township of North Dumfries in the 13 concession of the said Township, containing two hundred acres more or less and also I bequeath to my son Andrew Laudreth a lot of land being and lying in the Eleventh concession of the same Township of North Dumfries, containing 24 acres more or less and may be known as described by deed of the same, all the above property. I will and give unto my son Andrew Laudreth to his heirs and assigns forever..,.provided that my son Andrew shall well and truly pay unto his mother the above sum and in addition to the above sum he shall build his mother a comfortable cottage on the farm with a rood of ground for a garden if she wish to have it and also to keep a cow for her and also to provide for her yearly, a sufficient quantity of firewood made ready for the stove and also 12 bushels of potatoes yearly, and also that my wife shall have the use of all my household furniture as long as she lives with all the above annuities provided only that she remains a widow. And also I will and bequeath unto my other children as follows. I bequeath to my oldest George Laudreth the sum of three hundred pounds and also I will and bequeath until my third son James Laundreth the sum of three hundred pounds, and also I will and bequeath to my youngest son John Laudreth the sum of three hundred pounds. I also will and bequeath to my daughter Margreat the sum of three hundred pounds all of which sum to be well and truly paid to them in manor following: That two years after my death my son Andrew shall pay unto each of his brothers and sisters one fourth part of the above sum awarded to them and also to pay to them one every second year thereafter the like sum until there portions are all paid up in full. And also that at my death that any property that I may have, such as horses or carriages of any kind, that they shall be sold and the proceeds given to my wife. [After debts and expenses are paid, the residue] should be equally divided between my wife and children, George, James, John and Margreath. I also bequeath to my daughter Margreat the sofa and the eight day clock and the best china table but that my wife is to [have] the use of them as she lives and that my wife shall have the power to dispose of any furniture amongst her children as she may think proper at any time. I appoint my friend James Burgess? And John Gillespie and George Barrie Jr and Andrew Ramsay Tailor of Galt all of North Dumfries to be the only Executors of this my Last Will and Testament.
