    Hawksville's Roller Process Flouring Mills.

Hawksville is fortunate in having one of the best flouring mills in the county. These mills were established by the late John Hawke, the founder of Hawksville, in 1847. He operated them until 1865, when the firm of McCulloch & Wilson purchased the plant and conducted it for a period of ten years. Wilson then sold his interest to Mr. McCulloch, and the latter operated it until his death in 1896. The mills were operated in his name, however, for a year after his death, in 1897, when his son, Mr. Hugh McCulloch, became the owner, who a short time ago sold out to Mr. J. C. Shelly. The latter gentleman took possession on the 10th of June, 1898. The mills are equipped with the most modern machinery, and its reputation for turning out a first-class grade of flour is well known far and wide. The capacity of the mill is four stands double rolls, and one set single rolls and stone chopper. The motive power is furnished by both steam and water, the latter being contributed by the Conestogo river.

Mr. Shelly, the new proprietor is a miller of thorough experience and is bound to keep up the splendid reputation maintained for the mills by their late owners. He was born in Berlin, in 1852. He was married in 1876 to Miss Mary Ann, daughter of Mr. Jacob Weber, of St. Jacobs. They have been blessed with eleven children, all of whom are healthy looking and intelligent youngsters. He has been around considerable in his time, but by this he has acquired fine practical experience, a feature very necessary in the miller of today. He completed his trade under Hon. E. W. B. Snider in St. Jacobs, but previous to that he worked in the old B P. Rothwell, steam mills of Berlin, also owned by M. Snider, and was at one time the owner of the same. From St. Jacobs be went to Elkhart, Indiana, which was in 1872, where he worked a year and then went to Minnesota and worked as a stone dresser for about two years. While in Minnesota he was employed for some time by Chas. A. Pillsberry, the famous miller of Minneapolis. From the latter place he came back to Berlin on a visit, and subsequently entered in partner with David Lehnen. He was also s partner with Menno Shantz while at Berlin. After he left Berlin he went to Blair and took charge of the mills there for John S. Bowman, with whom he was engaged seven months. He was also engaged for some time with Mr. Joseph Seagram of Waterloo as a stone dresser. After that he spent two years and a half at Breslau for Moses Moyer. Leaving that place, he engaged with Mr. Menno Snider, of Conestogo, where he remained for fifteen years, resigning his position Iast September to come to Hawksville. While at Conestogo he was instrumental in giving the mills there a wide reputation for first- class flour. He promises to do the same here and keep up the former good reputation of the Hawksville mills. His chopping machinery runs every day in the week. There is always good demand for the flour made in these mills, and large quantities are shipped to the Lower Provinces.
