Excellent Cream (Apple) Pie |
- EXCELLENT CREAM (APPLE) PIE
Mrs. Ed. Merner, New Hamburg.
1 cup sifted flour, 2 tablespoons lard, 3 tablespoons cold water, roll out not too thin and lay in pie plate. Pare 6 or 8 good cooking apples, cut in quarters, lay around plate, about 1/2 inch from edge, working towards centre until plate is covered 3/4 cup white sugar, 1/4 teaspoon nutmeg, 2 or 3 dashes cinnamon take 3 teaspoons flour, stiring a little milk until smooth then fill cup 3/4 with mik. Pour over pie and dot with pieces of butter. Bake 30 minute with good fire.

Ginger Beer |
- GINGER BEER
Mrs. Ed. Merner, New Hamburg.
2 pounds of white sugar, 2 ounces of ground ginger, 1/ 1/2 ounces of cream of tartar, 2 sliced lemons, 2 gallons of boiled water. Let water stand until luke warm, then take 1/2 yeast cakes, and lay on top of a slice of bread, let this stand 24 hours, strain the mixture and bottle. Use within 1 week or 10 days.

- THE HAMBURG FELT BOOT CO.
Waterloo County has admittedly beceme a great felt centre within recent years. The industry is a staple and permanent one and therefore a highly desirable one in any community. The Hamburg Felt Boot Co. was established a decade ago and is a credit to the men who founded it and have so steadily pushed it forward. The chief credit in this connection undoubtedly belongs to the present manager, Mr. E. Merner, who is also president of the company. With untiring persistence, this gentleman has driven his factory to the front until today it occupies a fine premises 280 x 40 feet and two stories high. A full staff of 70 people arc kept busy and though many lines of business arc slack, the Hamburg Felt Boot Co. say business is very fair, something that could not be said if their product were not at all times up to the standard. They make a general line of felt boots and shoes and manufacture all their own felt. A ready market is found all the way from the Atlantic to the Pacific. HAMBURG FELT WORKS
This is a new enterprise for Hamburg, the plant having been put in operation about three weeks ago. Mr E Merner, who was born and raised here, is the founder of this, which will undoubtedly prove to be one of Hamburg's most important industries. The building in which the machinery has been placed consists of two rooms 30x60 and two 30x80 and is two stories high. There is an additional room about 30 feet square for the engine and boiler, and the picking room is 18x72 feet. There is a 100 horse power boiler and a fine brand new high speed 45 horse power engine, and the entire plant consists of the latest improved machinery. Mr. Mercer will employ from forty five to fifty people when in full operation. He manufactures felt shoes of every description, sole felt, harness felt, felt horse-blankets, felt socks, polishing felt and piano and organ felt. Mr. Merner has had ripe experience on the road as travelling salesman and some experience in the manufacture of felt at Brandon prior to opening up here. His experience on the road as a salesman will certainly be of great advantage to him in finding suitable market for his product. The general manager and overseer of the establishment is Mr. Joseph Pipher, a gentleman who has a thorough knowledge in the manufacture of felt. He was formerly employed in the J. & T. Grant felt works of Woodstock, and came from that place with first-class recommendations. The felt manufacturing industry is yet in its infancy, and with the rapid opening up to settlement of the great Northwest the demand for this class of goods will rapidly increase. In this case the New Hamburg Felt Works will not have been established in vain. It will have its share in the market. Mr. Merner is manufacturing a first-class article and his friends have every reason to believe that he will have a ready sale for all his plant is capable of producing. The CHRONICLE wishes the new industry abundance of success and congratulates New Hamburg on the introduction of another enterprise which will give steady employment to a large number of its inhabitants.
