"Around the turn of the century, hogs were a favourite livestock in Waterloo County. In fact, Waterloo County claimed to the best county for bacon hogs. Log hogs were exported to urban centres like the Union Stock Yards in Toronto where they were weighed and sold to dealers. Some others ended up at local slaughterhouses or larger plants like J. M. Schneiders where they were process for consumers in rural and urban districts. Two or three hogs were butchered for home use in the cold months and made up the major part of the diet for many families."
